Blueberry Coconut Milk Popsicles

Blueberry Coconut Milk Popsicles blend fresh or frozen blueberries with creamy full-fat coconut milk, sweetened lightly with pure maple syrup and balanced with a touch of sea salt. The mixture is blended smooth and frozen into popsicles, offering a refreshing and naturally flavored frozen treat with a creamy texture and fruity sweetness.

Description

Blueberry Coconut Milk Popsicles combine whole blueberries or frozen berries with coconut milk to create a smooth, creamy base. The addition of pure maple syrup adds a subtle sweetness that complements the blueberry flavor, while sea salt enhances the overall taste by balancing sweetness and bringing out blueberry notes. The mixture is processed in a high-speed blender until smooth, resulting in a consistent texture where small flecks of blueberry skin may appear but do not affect the popsicle's mouthfeel.

Pouring the mixture into molds and freezing for several hours produces a rich, creamy popsicle that can be enjoyed on warm days or as a refreshing snack anytime. The coconut milk provides a dairy-free option with a smooth, velvety finish, and the blueberries contribute antioxidants and natural fruit flavor.

To release popsicles from molds, running warm water on the outside or letting them sit at room temperature briefly softens them for easy removal, making them convenient to serve.

Ingredients

Servings
  • 4 cups blueberries or frozen blueberries, fresh
  • 1 (15-oz) can coconut milk full-fat
  • ¼ cup pure maple syrup
  • 1/8 tsp salt sea salt

Instructions

  1. Place blueberries, coconut milk, pure maple syrup, and salt in a high-speed blender and blend until completely smooth. There may still be little flecks of the outside of the blueberries in the popsicle mixture, but this won’t affect the texture.
  2. Pour the blueberry mixture into the popsicle mold, filling the holes almost all the way up.
  3. Insert a wooden popsicle stick into each of the holes and cover the mold with its cover.
  4. Freeze popsicles for 4 to 8 hours, or until they have completely set up.
  5. When you’re ready to eat a popsicle, you can run the outside of one (or more) of the molds under warm water for 30 seconds, or until the popsicle melts just enough to loosen up from the mold.  You can also thaw the popsicles at room temperature until they release easily from the mold.
  6. Enjoy these delicious popsicles on hot summer days or whenever the craving strikes.
