Blueberry Corn Salad
Description
Blueberry Corn Salad brings together fresh corn kernels, ripe blueberries, cucumber pieces, chopped red onion, cilantro, and jalapeno pepper for a lively combination of textures and flavors. The salad is tossed with a dressing made from olive oil, fresh lime juice, honey, ground cumin, salt, and pepper. This dressing balances sweetness, acidity, and spice while complementing the fresh ingredients.
The salad highlights contrasts between the juicy bursts of blueberries, the crispness of corn and cucumber, and the sharp notes from onion and jalapeno. Cilantro adds a fresh herbaceous quality, while the lime juice brightens the overall taste. It is served chilled or at room temperature, making it a cooling option during warmer meals.
Optional variations include adding avocado for creaminess or crumbled feta or queso fresco for a salty element. While fresh corn is recommended for best flavor and texture, frozen corn may be used as a substitute if necessary. Those who prefer to avoid cilantro can swap it with basil for a different herbal note.
