  • 2 cups blueberries fresh
  • 1 cucumber diced, seedless
  • 1/3 cup onion red, finely chopped
  • 1/3 cup cilantro chopped, fresh
  • 1 jalapeno pepper seeded and finely chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1/2 teaspoon cumin ground
  • salt to taste, Kosher salt
  • black pepper to taste, Kosher salt

Instructions

  1. In a large serving bowl, combine corn, blueberries, cucumber, red onion, cilantro, and jalapeno.
  2. To make the dressing, whisk together olive oil, lime juice, honey, cumin, salt, and pepper. Pour dressing over salad and stir until combined.
