Blueberry curd

Blueberry curd is a smooth, tangy spread made by combining cooked blueberries and lemon juice with eggs, sugar, lemon zest, and butter. The mixture is gently cooked in a double boiler until thick and glossy, resulting in a creamy, fruity curd perfect for spreading on toast or using in desserts.

Description

This recipe cooks blueberries and lemon juice until the berries burst, then strains the mixture to remove solids for a smooth liquid. Egg and egg yolk are whisked with sugar until bright and combined with the blueberry-lemon liquid and lemon zest. Adding cold butter in small chunks, the mixture is stirred continuously over gentle heat in a double boiler until thickened enough to coat the back of a spoon.

The resulting curd features the sweet-tart flavor of blueberries combined with fresh lemon brightness and a silky texture from the butter and eggs. It can be stored in sterile containers and refrigerated until used. This preparation yields a versatile fruit curd suitable for many dessert applications or as a spread.

  • 1 cup blueberries
  • ¼ cup lemon juice (¼ cup is approx 1 lemon)
  • 1 egg
  • 1 egg yolk
  • 1 lemon ie from 1 lemon, zest
  • ¼ cup sugar or a little less if you prefer
  • 2 tablespoon butter cut into small chunks, unsalted

Instructions

  1. Put the blueberries and lemon juice in a pan and bring to a simmer. Simmer gently for around 5 minutes until the blueberries pop, then remove from heat and press through a fine strainer/sieve. Set aside to cool slightly.
  2. Beat together the egg and egg yolk in a small bowl. Add the sugar and whisk until bright then add the lemon blueberry mixture and lemon zest and mix. Add the chunks of butter.
  3. Put the bowl over hot water in a pan so that the water comes up the sides of the bowl but doesn't come in, and the bowl is not touching the bottom of the pan. Stir regularly as the butter melts then constantly as the mixture starts to thicken.
  4. It's ready when thick enough to stick to the back of a spoon, around 5 minutes. Transfer to sterile jar or other sealable container and either seal when warm or cover the top with cling wrap/film to save it developing a skin. Store in the fridge until needed.
