Blueberry Doughnut French Toast Casserole
Description
The Blueberry Doughnut French Toast Casserole uses glazed blueberry doughnuts cut into pieces as its base, layered and soaked overnight in a custard mix of milk, eggs, vanilla extract, and sugar. This soak softens the doughnuts thoroughly. Adding fresh blueberries on top before baking enhances the fruity profile and adds bursts of juiciness. The casserole bakes partially uncovered and then covered to ensure the inside is cooked through without drying out. After baking, a glaze made from cream cheese, butter, vanilla, milk, and powdered sugar is poured over the casserole while still slightly warm, introducing a creamy sweetness that complements the fruitiness.
The texture combines softness from the soaked doughnuts and a slight crust from baking, offering a comfortable contrast. Fresh blueberries maintain their integrity rather than breaking down completely, providing occasional fresh pops of flavor. Preparing the casserole the night before reduces morning work, making it ideal for slow weekend breakfasts or special brunch occasions.
The cream cheese glaze can be adjusted in thickness by varying milk quantities, allowing it to be drizzled smoothly over each portion. Overall, this casserole layers sweet, fruity, and creamy elements into a cohesive baked breakfast treat that highlights the unique use of glazed doughnuts in a French toast style.
Ingredients
- 10 glazed blueberry cake doughnuts Krispy Kremes brand
- 2 cups milk
- 6 egg large
- 1 teaspoon vanilla extract
- 3 tablepoons sugar
- ½ cup blueberries fresh
Glaze
- 2 ounces cream cheese softened
- 3 tablespoons butter softened
- 1 teaspoon vanilla extract
- 4-6 tablespoons milk as needed
- 4-5 cups powdered sugar
Instructions
Night Before
- Cut doughnuts into 1-inch pieces and layer evenly in a greased 9x13 inch baking pan. In a medium bowl whisk together milk, eggs, vanilla, and sugar. Pour over the doughnuts (being sure to pour over all of the donut pieces, not just right in the middle). Cover tightly with plastic wrap and chill overnight in the fridge.
Morning Of
- Uncover baking dish. Add blueberries to top and bake at 350 degrees for 20 minutes, then cover loosely with a sheet of foil and bake for about 15-20 minutes longer until donuts are baked through.
- Cream together cream cheese and butter until light and fluffy. Mix in vanilla and 4 tablespoons milk. Gradually mix in powdered sugar until completely incorporated. Add 1-2 tablespoons of milk if needed to make glaze pourable. Pour over slightly cooled casserole and serve.
Notes
- This casserole is designed for overnight soaking, so prepare it the night before baking for best results.
- Use fresh blueberries for topping to add bursts of flavor and maintain their shape during baking.
- Adjust the glaze thickness with more or less milk to achieve a pourable consistency.
- Serve the casserole warm, drizzled with the cream cheese glaze for best taste and texture.
