Blueberry French Toast Casserole
Description
The Blueberry French Toast Casserole brings together stale cubes of French bread mixed with fresh blueberries and soaked in a custard blend of eggs, whole milk, sugar, lemon zest, cinnamon, and salt. The lemon zest adds brightness, while the cinnamon provides warm spice notes that complement the natural sweetness of the blueberries. Refrigerated for several hours or overnight to allow the bread to absorb the custard fully, this preparation results in a custardy interior and a tender texture throughout.
The casserole is topped with a mixture of melted unsalted butter, brown sugar, cinnamon, and salt before baking at 375°F until the surface turns golden brown and crisp. This process creates a pleasantly crunchy top layer that contrasts with the soft soaked bread beneath. Letting the casserole cool slightly before serving helps it set and improves texture.
Serve the casserole with extra fresh blueberries, a dusting of powdered sugar, and maple syrup for added sweetness and moisture. This dish works well for a communal breakfast or brunch and can be prepared in advance for convenience.
