Blueberry Jello Salad
Description
This Blueberry Jello Salad begins by dissolving blackberry Jello in boiling water, then mixing in drained crushed pineapple and blueberry pie filling before pouring the mixture into a 9x13-inch pan to chill until firm. The gelatin sets into a fruity, slightly firm base with sweet and tangy pineapple and blueberry flavors.
The topping blends softened cream cheese with sugar and whipped topping, creating a smooth, fluffy layer that contrasts the gelatin’s texture. This topping is spread over the set jello then chilled again to meld flavors and firm up. Fresh blueberries can be added before serving for a fresh burst of flavor and additional texture.
This versatile recipe allows fruit substitutions like bananas, strawberries, or raspberries and alternate jello flavors, though blackberries are chosen here for their deep color. The salad can be served plain without topping for those who prefer less richness or have lactose intolerance.
Ingredients
- 2 cups water boiling
- 6 ounces blackberry jello
- 16 ounces pineapple drained, crushed
- 1 can blueberry pie filling
Topping
- 8 ounces cream cheese softened
- 2 Tablespoons sugar
- 16 ounces Cool Whip softened
- blueberries optional, fresh
Instructions
- In a large bowl combine Jello and boiling water. Stir until dissolved. Mix in pineapple and pie filling. Pour into a 9x13-inch pan and refrigerate for about 2 hours until firm.
- Topping: Mix cream cheese and sugar together well. Stir in Cool Whip.
- Spread topping over set Jello. Refrigerate at least half an hour before serving. Top with fresh blueberries if desired.
Notes
- You can substitute blueberries with other fruits like bananas, strawberries, or raspberries depending on preference.
- The dessert is enjoyable without the topping, suitable for those with lactose intolerance or who prefer a lighter dish.
- Different jello flavors such as blueberry, raspberry, strawberry, or lemon can be used for varied flavors and colors.
- Fresh blueberries may replace canned pie filling but yield a milder flavor intensity.
- Other pie fillings are possible but change the characteristic "blueberry" flavor of the salad.
