Blueberry Lemon Overnight Oats
Description
Combining rolled oats, chia seeds, protein powder, yogurt, and plant-based milk creates a thick, creamy base for this overnight oat recipe. The lemon zest adds brightness, while blueberries contribute fruity sweetness and texture. The mixture is refrigerated overnight or longer to allow the oats and seeds to absorb moisture and soften. The instructions note stirring before eating and adjusting thickness by adding more milk as needed.
Served cold, this breakfast can be topped with additional blueberries, granola, or nut butter to add crunchy or creamy elements. The use of protein powder adds satiety and supports nutritional balance. Eating directly from the jar makes it convenient for busy mornings.
Notes mention a specific vanilla protein powder but allow for omission if unavailable, giving flexibility. The oats keep well refrigerated in a sealed container for up to five days, supporting meal prep or leftovers.
Ingredients
- ½ cup rolled oats old fashioned
- 1 teaspoon chia seeds
- 1 Tablespoon protein powder I used Nuzest protein powder, vanilla
- ½-1 teaspoon lemon zest
- ¼ cup Greek yogurt full fat, plain, or vegan yogurt
- ¾ cup non-dairy milk I used almond milk
- pinch of salt
- ½ teaspoon maple syrup
- ¼ cup blueberries plus more for topping
- granola toppings of choice
- blueberries
- nut butter
Instructions
- Add oats, milk, yogurt, protein powder, maple syrup, chia seeds, blueberries, lemon zest and sea salt into a jar or storage container with a lid. Stir ingredients together.
- Place in the fridge overnight. If you're in a rush you can shorten the soak time to 2-4 hours.
- The next morning (or when ready to eat), remove lid and give oats a big stir. If they seem too thick you can add a little more milk to loosen the mixture. Top with your favorite toppings and enjoy. You can eat the oats straight from the jar or pour into a bowl for serving.
- Overnight oats should last up to 5 days in the fridge in a sealed airtight container.
Notes
- You may omit the protein powder if you don't have any on hand without compromising the basic recipe.
- Overnight oats keep fresh in the refrigerator for up to 5 days in a sealed container.
