Blueberry Lemon Overnight Oats

This recipe layers blueberry compote with a lemon-zest infused mixture of rolled oats, Greek yogurt, almond milk, chia seeds, and vanilla. Left to soak overnight, the oats absorb moisture, yielding a creamy, tangy, and slightly sweet breakfast option enhanced by bursts of softened blueberries and subtle lemon brightness. The chia seeds add a mild texture and nutrient boost, making it a satisfying make-ahead meal.

Description

Blueberry Lemon Overnight Oats combine rolled oats soaked in Greek yogurt and almond milk with lemon zest and vanilla extract, creating a creamy base with a mild citrus aroma. The blueberry compote is cooked gently until berries burst, intensifying the fruit's sweetness and flavor before being cooled and layered with the oat mixture. Chia seeds absorb moisture and help thicken the oats, resulting in a luscious consistency after refrigeration.

The assembly in layers allows the tartness of lemon and sweetness of blueberries to meld, creating balance in every spoonful. This preparation requires no cooking time in the morning and can be made several days ahead, ideal for a quick, refreshing breakfast or snack.

Serving may be enhanced with extra Greek yogurt or lemon zest for added creaminess and aroma. Warming briefly can also increase comfort on cooler mornings.

Ingredients

Servings
  • 2/3 cup rolled oats (54 grams)
  • 1/2 cup blueberries (74 grams)
  • 1/2 cup almond milk 85 grams, unsweetened vanilla
  • 1/2 cup Greek yogurt 122 grams, Dannon Light & Fit Vanilla
  • 2 tbsp lemon zest
  • 2 tbsp maple syrup (42 grams)
  • 1/2 tbsp chia seeds (6 grams)
  • 1 tsp vanilla extract
  • pinch salt

Instructions

  1. Add blueberries and maple syrup to a small pan and bring to a boil over medium heat. Lower heat to a simmer and cook until blueberries begin to burst. You can help them along by pressing them against the side of the pan with the back of a spoon. Set aside to cool.
  2. Whisk together Greek yogurt, almond milk, vanilla extract, and lemon zest. Add oats, chia seeds, and salt, and mix until well combined.
  3. Layer oat mixture with blueberry mixture in a serving container or jar. Refrigerate overnight or up to 3 nights. I like to heat mine in the microwave for 30 seconds before serving. Top with extra Greek yogurt and lemon zest before serving, if desired.

Notes

  • Use unsweetened vanilla almond milk for balanced flavor.
  • Heating blueberry compote before layering aids flavor release and softens berries.
  • Store in the refrigerator for up to three days to maintain freshness.
  • Optional: Heat for 30 seconds before serving for a warmed texture.
