Blueberry Lemon Refrigerator Jam

Blueberry Lemon Refrigerator Jam is a fresh, homemade fruit spread made by cooking fresh blueberries with sugar, lemon zest and juice, vanilla bean paste, and a touch of water. The jam thickens as it simmers and then further sets when cooled, offering a sweet, tangy spread with fruit pieces or smooth texture depending on preference.

Description

This Blueberry Lemon Refrigerator Jam recipe starts by combining blueberries, sugar, lemon zest and juice, vanilla bean paste, and water in a saucepan. Boiling briefly extracts juice from the berries, then a low simmer thickens the mixture for 45-50 minutes, softening the fruit and developing jam consistency. Stirring prevents sticking and burning.

The lemon zest and juice introduce a fresh brightness to balance the sweetness, while vanilla bean paste adds depth to the flavor. After thickening, the jam can be blended smooth or left chunky to preserve blueberry pieces, according to taste.

The jam is ladled warm into mason jars, sealed, and cooled to room temperature before refrigeration. Stored chilled, it lasts about 3-4 weeks, making it convenient for regular use on toast, yogurt, or baking.

Ingredients

Servings
  • 3 pints blueberries fresh
  • 1 cup granulated sugar
  • lemon zest and juice of 2
  • 2 teaspoons vanilla bean paste
  • 1 tablespoon water

Instructions

  1. In a large saucepan combine blueberries, sugar, lemon zest and juice, vanilla bean paste, and water. Cook over medium/high heat bringing the mixture to a boil for about 5-7 minutes or so. At this point there should be a decent amount of liquid coming from the blueberries. Reduce the heat to low and continue cooking over low heat stirring every few minutes or so to ensure the mixture does not stick to the pot.
  2. Cook until the liquid has reduced, thickened, and blueberries are very soft. This will take anywhere from 45-50 minutes. Remove from heat and allow to cool for about 10 or 15 minutes or so. The jam will thicken as it cools.
  3. At this point you can either blend it until smooth or leave as is. I like my jam with pieces of fruit, so I leave as is.
  4. Ladle the warm jam into mason jars. Place lids and rings on top and tighten to seal the jars. Allow the jam to come to room temperature before placing them in the refrigerator.
  5. Jam will last in the refrigerator about 3-4 weeks.
  6. Makes about 16 ounces of jam.

Notes

  • Jam keeps about 3-4 weeks refrigerated when stored properly in sealed jars.
  • Choose whether to blend the jam smooth or leave fruit pieces for texture preference before storing.
  • Stir regularly during cooking to prevent sticking and ensure even thickening.
