Blueberry Muffin Baked Oatmeal

This baked oatmeal recipe combines soft oats with juicy blueberries and a crumbly oat streusel topping for a texture reminiscent of muffins. The mix of maple syrup and mashed banana offers natural sweetness while the optional vanilla protein powder boosts nutrition. Baking produces a golden crust around a tender, moist center, making it suitable for a comforting breakfast or snack. Served warm, leftovers hold up well and are enjoyable reheated.

Description

Blueberry Muffin Baked Oatmeal is a hearty breakfast dish that blends old fashioned oats with fresh blueberries and warming cinnamon. The streusel topping adds a buttery, sweet crunch contrasting with the soft baked oats underneath. Ingredients like maple syrup and mashed banana provide natural sweetness, while optional vanilla protein powder enriches the texture and taste. Baking until set creates a golden crust and tender interior that hold together for easy slicing.

The flavor balances the subtle tartness of blueberries with sweet maple and gentle spice. The combination of oats, eggs, and milk produces a custard-like texture that feels satisfying without being dense. Its moderate sweetness and wholesome ingredients make it a versatile dish to eat on its own or alongside yogurt and honey as suggested.

This oatmeal bake can be prepared in advance and reheated for a quick morning meal or healthy snack. Leftover portions stay moist overnight and warming slightly will restore the fresh-baked appeal. The streusel topping maintains some crispness even after refrigeration.

Nutrition calculations used mashed banana and protein powder; omit the protein powder if desired but consider adding a bit more sweetener.Chill the streusel until firm before baking to maintain topping texture.

Oatmeal Bake:

  • 2 egg room temp, large
  • 1.25 cup milk I used almond milk, any, 300g
  • 1/4 cup maple syrup pure, 60g
  • 1/4 cup banana or Greek yogurt, mashed, 60g
  • 2 Tbsp butter melted, 28g
  • 2 tsp vanilla extract
  • 2 cups old fashioned oats 200g
  • 1/4 cup vanilla protein powder optional, 30g
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup Blueberry plus more for topping, 140g

Instructions

  1. Preheat the oven to 375 degrees F. Spray a 7x11, 8x8 or 9x9-inch baking dish with cooking spray and/or line with parchment paper.
  2. First, make the streusel by mixing together the ingredients in a small bowl. Place in the fridge to harden.
  3. To a large bowl, add the eggs, milk, maple syrup, mashed banana, butter and vanilla; whisk to combine.
  4. Mix in the oats, protein powder, baking powder, cinnamon and salt.
  5. Fold in the blueberries, then transfer to the baking dish. Top with extra blueberries if desired.
  6. Take the streusel out of the fridge and crumble it evenly over top.
