Blueberry Muffin Oatmeal
Description
Instant oats are cooked in milk or water until tender, then stirred with blueberry jelly that adds sweetness and fruit flavor throughout. A topping mix of brown sugar, cinnamon, and chopped walnuts or almonds is sprinkled over the oatmeal and briefly microwaved to caramelize the sugar slightly. Fresh blueberries added last provide freshness and a vibrant contrast to the sweet, spiced oatmeal base.
The oatmeal's texture is creamy and smooth, with a gentle crunch from the nuts and a fruity note from both the jelly and fresh berries. The cinnamon and brown sugar mix resembles the spices found in a classic blueberry muffin, pairing naturally with the berries and oats.
Ingredients
- 1/2 cup instant oats Quaker®
- 3/4 cup milk or water
- 1 Tablespoon blueberry jelly
- 1 Tablespoon brown sugar
- 1 Tablespoon walnuts chopped or almonds
- 1/4 teaspoon cinnamon
- blueberries fresh handful
Instructions
- In a small bowl, combine the brown sugar, nuts, and cinnamon. Set aside.
- Combine the oats and milk or water in a microwave-safe bowl. Stir, then cook over high heat for 2 1/2 - 3 minutes until most of the liquid is absorbed and oats are cooked. Stir in the blueberry jelly.
- Sprinkle the brown sugar mixture over the top of the oatmeal then return the bowl to the microwave and cook over high heat for 30-45 more seconds. The brown sugar will caramelize into the top of the oatmeal.
- Splash with another tablespoon of milk if desired then sprinkle with fresh blueberries. Enjoy!
