MUFFIN

  • 2 cups flour *all purpose
  • 3 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 egg
  • 3/4 cup sugar
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/2 cup vegetable oil
  • 2 1/2 cups Blueberry divided
  • 1 tablespoon flour

STREUSEL

  • 1 cup flour *all purpose
  • 2/3 cup sugar
  • 1/2 cup butter melted
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat oven to 400 degrees and line a muffin tray with liners.

STREUSEL

  1. In a small bowl, combine the flour, sugar, and cinnamon.
  2. Pour in the melted butter slowly and stir with a fork until a crumbly mixture forms. Set aside.

MUFFINS

  1. In a medium bowl, combine the eggs and sugar.
  2. Whisk in the sour cream, oil, and vanilla.
  3. Add in the flour, baking powder, and salt.
  4. Stir until just combined.
  5. In a small bowl, combine 1 cup blueberries with the 1 tablespoon flour.
  6. Add blueberries into batter and gently fold into mixture.
  7. Spoon mixture evenly into each lined muffin cup, filling about 2/3.
  8. Sprinkle the remaining blueberries on top of each muffin cup.
  9. Sprinkle the streusel generously on top of each muffin cup.
  10. Place pan into preheated oven and bake for about 20 minutes.
  11. Remove from oven and allow to cool slightly before removing and enjoy!
