Blueberry Sausage
Description
This recipe starts by combining seasoned ground pork and beef with salt, sage, thyme, garlic and onion powders, cinnamon, cloves, and maple syrup. Fresh blueberries are gently folded into the mixture to retain their shape. The meat is portioned into 12 patties using an ice cream scoop for uniform size, with olive oil applied to hands to aid shaping and reduce sticking.
The patties are cooked in batches over medium-high heat with olive oil to form a crisp exterior while ensuring the inside remains juicy. The blueberries add moisture and bursts of sweetness while the spices provide a warm, aromatic flavor profile. Cooking methods include pan-frying, baking, or air frying according to preference.
Patties can be frozen on a parchment-lined sheet before storage and reheated directly from frozen or thawed. This sausage offers a creative twist on classic breakfast sausage by incorporating fresh fruit and varied herbs, suitable for a unique morning protein option.
Ingredients
- 1 pound ground pork
- 1 pound ground beef
- 2 teaspoons salt
- 1 tablespoon sage finely chopped or 1 teaspoon Dried Sage, fresh
- 2 teaspoon thyme finely chopped or 1 teaspoon Dried Thyme, fresh
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon cloves ground
- 2 tablespoons maple syrup
- 1 cup blueberries fresh
- extra virgin olive oil
Instructions
- Combine all ingredients except for the blueberries and olive oil in a bowl. Next add the blueberries and gently fold theminto the ground meat mixture.
- Divide and form into 12 patties. Pour some olive oil onto your hands to help you handle the meat. The meat is less likely to stick to your hands as you form the patties.
- Heat a few tablespoons of oil in a large skillet over medium high heat. Place the patties in skillet and cook about 5 minutes per side. You’ll need to do the cooking in batches. Serve immediately.
Notes
- Freeze sausage patties on a parchment-lined baking sheet before transferring to freezer-safe containers to prevent sticking.
- Reheat patties from frozen or thawed; cooking from frozen requires extra time.
- Baking option: 20 minutes at 350°F; air fryer option: 20 minutes at 370°F flipping halfway.
- Applying olive oil to hands before shaping helps prevent the meat from sticking.
- Using an ice cream scoop ensures evenly sized patties for consistent cooking.
- Pan-frying yields the crispiest exterior, though air frying is a convenient alternative with less oil splatter.
- Modern air fryer models vary in size and functionality; choose one that suits your kitchen space and cooking needs.
