Blueberry Streusel Muffins

Blueberry Streusel Muffins combine fresh blueberries with a tender, moist muffin base and a crumbly cinnamon-spiced streusel topping. The batter envelops blueberries dusted lightly with flour to maintain an even distribution throughout. Baking at a moderate temperature produces muffins with a golden crust and soft interior, accented by bursts of juicy fruit and sweet, crunchy streusel. These muffins make a practical breakfast or snack choice when a balance of sweet and mildly tart flavors is desired.

Description

Blueberry Streusel Muffins feature a batter made from all-purpose flour, milk, butter, egg, sugar, and almond extract to add subtle flavor. Incorporating blueberries dusted with flour helps prevent them from sinking to the batter's bottom. The streusel topping blends flour, sugar, cinnamon, butter, and a pinch of salt, providing a textured, sweet crunch that contrasts with the moist muffin interior. Baking first at a higher temperature to set structure, then reducing heat allows even cooking without over-browning.

Once baked, the muffins showcase a golden top with streusel and berries visible on the surface, enhancing both taste and appearance. They suit breakfast or casual snacking occasions where a handheld, fruit-accented baked good is appropriate.

For those using frozen blueberries, adding extra baking time ensures thorough cooking without affecting texture. Pressing the streusel topping gently can encourage larger crumb clusters for variation in texture.

Ingredients

Servings
  • 1 ¾ cups all-purpose flour + 1 tablespoon for dusting blueberries
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup granulated sugar
  • ¾ cup milk
  • ¼ cup butter melted
  • 1 egg room temperature
  • ½ teaspoon almond extract or 1 teaspoon vanilla extract
  • 1 ¾ cups blueberries divided, fresh

Streusel Topping

  • ½ cup all-purpose flour
  • ½ cup granulated sugar
  • ¼ cup butter softened
  • ¾ teaspoon cinnamon
  • pinch salt

Instructions

  1. Preheat the oven to 400°F and line a muffin pan with liners.
  2. In a large bowl, combine 1 ¾ cup flour, baking powder, sugar, and salt.
  3. In a medium bowl whisk together the milk, egg, butter, and almond extract. Pour into the dry ingredients and stir just until slightly moistened.
  4. Toss 1 ¼ cups of blueberries with 1 tablespoon of flour. Add to the batter and gently stir just until combined. Divide among 12 muffin cups.
  5. For the streusel, combine flour, sugar, butter, cinnamon, and salt. Mix well to combine, the mixture should hold when pinched.
  6. Top the muffins with the remaining 1/2 cup of blueberries and sprinkle the streusel over top.
  7. Turn the oven down to 375℉ and bake the muffins for 16-20 minutes or until a toothpick comes out clean. Remove from the pan and cool on a baking rack.

Notes

  • If using frozen blueberries, keep them frozen and add 4 to 6 minutes to the baking time for proper cooking.
  • Press together streusel topping pieces gently before sprinkling to create larger, more distinct crumb clusters.
