Blueberry Waffles

These homemade Blueberry Waffles are moist and tender on the inside, with a thin crisp outside. Flavorful with butter and buttermilk, plus pops of sweet, juicy blueberries and a touch of bright lemon, this easy waffles recipe is destined for breakfast, lunch, and dinner!

Ingredients

  • cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt Morton brand
  • cups buttermilk
  • 2 egg large
  • ½ cup butter melted and cooled, unsalted
  • 2 tablespoons lemon juice freshly squeezed
  • 1 tablespoon lemon zest fresh
  • 1 cup blueberries plus more for garnish, fresh

Instructions

  1. Preheat waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, whisk the flour, sugar, baking powder, baking soda, and salt.
  3. In a medium bowl, whisk the buttermilk, eggs, melted butter, lemon juice, and lemon zest. 
  4. Add the wet ingredients to the dry and mix just until no large lumps of flour remain. Do not overmix.
  5. Gently fold in the blueberries.
  6. Grease waffle iron with melted butter or nonstick cooking spray and then add a scant cup of batter to the center of the iron. 
  7. Cook for 3-4 minutes, or until the waffle is golden brown to your liking. Repeat with the remaining batter. 

Notes

  • To keep waffles warm (if you want to prepare all the waffles and then eat them all at the same time), place them on a cooling rack set over a baking sheet. Place in a 250° F oven for up to 30 minutes.
