Blueberry Waffles
Description
Blueberry Waffles feature a classic waffle batter enriched with melted butter and vanilla, creating a tender yet crisp texture. Fresh or frozen blueberries folded into the batter add juicy pockets of fruit throughout, which soften the waffle and bring subtle tartness.
The waffles cook to a light brown, slightly crispy finish on the outside with a soft crumb inside. Baking powder ensures a good rise, and the combination of sugar and butter provides a rich flavor and enticing aroma while cooking.
These waffles pair naturally with simple toppings like powdered sugar and maple syrup. They can also be enjoyed with whipped cream, blueberry sauce, or ice cream for a dessert variation.
Adding cinnamon or lemon zest to the batter introduces warmth and brightness. For make-ahead convenience, the waffles freeze well when separated by parchment and can be toasted later. Slightly undercooking them before freezing prevents over-browning upon reheating.
Ingredients
DRY
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon baking powder
- 2 tablespoons sugar granulated white
WET
- 2 egg large
- 6 tablespoons butter melted
- 1 1/2 cup milk
- 2 teaspoons vanilla extract
TO FOLD IN
- 4 ounces blueberries fresh
TO SERVE
- 1 tablespoon powdered sugar
- ½ cup maple syrup
Instructions
- Preheat the waffle iron.
- In a large bowl, whisk together the dry ingredients.
- In a smaller bowl, whisk the eggs, melted butter, milk and vanilla until well combined
- Add the wet ingredients to the dry, and mix until just combined. Mixture will be lumpy.
- Fold in the blueberries.
- Spray the waffle iron with baking spray, and cook waffles until light brown and slightly crispy.
- Serve dusted with powdered sugar and a little maple syrup.
- Devour.
Notes
- Adding about a teaspoon of cinnamon enhances the waffles with warm spice notes.
- Grate some lemon zest into the batter for a fresh, bright flavor contrast.
- Frozen waffles freeze well between parchment sheets in a bag for up to 3 months; reheat in a toaster.
- Undercook waffles slightly before freezing to avoid over-browning when toasted.
- Fresh or frozen blueberries both work fine; frozen may add more moisture and slight bleeding but not affect taste.
