Blueberry Waffles

Blueberry Waffles combine a lightly spiced batter with fresh or frozen blueberries folded throughout, producing waffles that are fluffy inside with juicy bursts of berry flavor. The batter includes vanilla and almond extracts for subtle depth, and the waffles cook evenly crisp on the outside.

Description

This waffle recipe begins by mixing all-purpose flour, sugar, baking powder, and cinnamon to create a balanced dry base. A separate mixture of milk, vegetable oil, eggs, and extracts is whisked and combined with the dry ingredients to form a batter that remains slightly lumpy to avoid toughness. Blueberries are gently folded in just before cooking.

Cooking the batter in a preheated waffle iron allows the waffles to develop a crisp exterior while maintaining a light and tender interior. The blueberries soften during cooking, releasing juice in small pockets throughout each waffle.

Ideal for breakfast or brunch, these waffles can be served with butter, syrup, or additional fresh berries. The recipe notes that nutritional values vary based on brand ingredients.

Ingredients

Servings
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 3/4 cups milk
  • 1/4 cup vegetable oil
  • 2 egg large
  • 1 teaspoon vanilla
  • 1 teaspoon almond extract
  • 1 to 1 1/2 cups blueberries fresh or frozen

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  2. In another bowl, or in a large liquid measuring cup, combine the milk, vegetable oil, eggs, vanilla extract and almond extract. Whisk until the eggs are broken up and the mixture is combined.
  3. Pour the liquid ingredients into the dry ingredients. Whisk together. Do not over-mix - the batter should still have some small lumps but all big lumps should be whisked out.
  4. Let the mixture sit while you preheat your waffle iron.
  5. When the waffle iron is hot, stir the blueberries into the batter.
  6. Cook the batter according to the waffle maker instructions, being careful to evenly distribute the blueberries through the waffles.

Notes

  • Nutritional information is an estimate and can vary based on specific product brands.
  • Do not over-mix the batter to keep waffles tender and light.
  • Fresh or frozen blueberries can be used; evenly distribute them in the batter before cooking.
