Blueberry Waffles

Blueberry Waffles combine a fluffy batter made with buttermilk, separated eggs, and melted butter, folded together with fresh blueberries tossed in flour to prevent sinking. Description

This recipe starts with mixing dry ingredients including flour, sugar, baking powder, baking soda, and salt. Separately, buttermilk, egg yolks, melted butter, and extract are blended, then combined with the dry ingredients. Whipped egg whites are folded in to lighten the batter, ensuring the waffles come out airy and soft.

Fresh blueberries are coated in a bit of flour before folding to keep them suspended in the batter during cooking. The batter is cooked in a preheated waffle iron until golden and crisp on the outside while remaining soft inside.

These waffles serve well for breakfast or brunch topped with syrup, butter, or additional fresh fruit. Frozen blueberries may be used without thawing for convenience but will slightly alter texture.

  • 1 ⅓ cup blueberries fresh
  • 2 cups all-purpose flour + 1 tablespoon
  • 2 tablespoons granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups buttermilk
  • 2 egg separated
  • cup butter melted
  • ¼ teaspoon almond extract or 1 teaspoon vanilla extract

Instructions

  1. Preheat waffle iron according to manufacturer's directions. Toss blueberries with 1 tablespoon flour and set aside.
  2. Combine dry ingredients in a medium bowl.
  3. In a separate bowl, mix buttermilk, egg yolks, butter, and extract. Set aside.
  4. Place egg whites in a stand mixer and beat on medium-high speed until stiff peaks form.
  5. Add egg yolk mixture to flour mixture and stir to combine. Fold in egg whites. Fold in blueberries.
  6. Grease waffle iron and drop batter, close the lid and cook 3-5 minutes or until golden.

Notes

  • Use fresh or frozen blueberries; frozen do not require thawing before use.
