Description
Boiled Peanuts are prepared by simmering fresh green peanuts in salted water for a long period, typically about four to six hours or more, until they reach a tender but not mushy texture. The process starts by thoroughly washing the peanuts to remove dirt. They are then covered completely with water, salted generously, and brought to a boil before reducing to a simmer. The salted water seasons the peanuts throughout cooking, but much of the salt is discarded with the cooking liquid to keep the peanuts balanced in flavor. Teeth test the peanuts for doneness, and once ready, they are drained and stored refrigerated to prevent becoming overly salty.
This snack is popular in Southern cuisine and is often served as a casual appetizer or roadside snack. Its soft, warm texture and mild salty taste make it quite different from roasted or raw peanuts. Patience in simmering yields peanuts that are easy to shell and enjoyable to eat in gatherings or as a comfort food.
Ingredients
- 1 gallon green peanuts cleaned
- 1/2 cup salt don't worry – most of it gets discarded
- water
Instructions
- Wash the peanuts well to make sure all the dirt is dislodged. I usually fill the sink, dump the peanuts in and agitate them.
- Place the peanuts in a very large pot and add water to cover the peanuts by 1 inch or more.
- Add salt and stir well. Remember that a huge amount of the salt gets discarded with the cooking brine.
- Bring it all to a boil, then reduce the heat to a simmer, cover and cook until done. Start testing for doneness after about 4 hours. The peanuts should have a soft, but not mushy, texture. Cook longer if needed. Sometimes it takes 6 or more hours for the peanuts to cook.
- After the peanuts are done, drain the brine and store the peanuts in the refrigerator. Don’t let them sit in the brine as they'll become too salty.
