Bolognese Sauce

Bolognese Sauce is a rich, savory meat sauce combining pancetta, ground beef, vegetables, and crushed tomatoes, slowly simmered with herbs and finished with cream and fresh parsley. The method develops deep, complex flavors with a hearty texture, balancing the meat and tomato base for a classic ragù style sauce. This recipe yields a thick sauce suited for serving over pasta or as a flavorful base for other dishes.

Description

The Bolognese Sauce starts with sautéing chopped pancetta to render fat and flavor. Butter and aromatic vegetables – onion, celery, and carrot – are softened to build a flavor base. Ground beef is then browned and seasoned before deglazing the pan with white wine, allowing the alcohol to cook off while concentrating flavor.

Crushed tomatoes and a bay leaf are added, and the sauce is simmered low and slow for one and a half to two hours to meld flavors and thicken the sauce. Finally, half-and-half cream is stirred in along with fresh chopped parsley to add richness and freshness. The final sauce is thick, meaty, and balanced with herbs and a touch of creaminess.

This sauce pairs well with various pasta shapes like tagliatelle or pappardelle to hold the chunky sauce. It can also be used in baked dishes like lasagna or warmed as a hearty topping for polenta or mashed potatoes.

  • 4 oz pancetta (chopped (or center cut bacon))
  • 1 tbsp butter
  • 1 onion chopped, small
  • 1/2 cup celery (minced)
  • 1/2 cup carrot minced
  • 1 lb ground beef 95% lean
  • 1/4 cup white wine
  • 2 - 28 oz crushed tomato I love Tuttorosso, canned
  • 1 bay leaf
  • salt
  • black pepper
  • 1/4 cup parsley chopped, fresh
  • 1/2 cup half-and-half

Instructions

  1. In a deep heavy saute pan, sauté pancetta until fat melts.
  2. Add butter, onions, celery and carrots and cook on medium-low heat until soft, about 5 minutes.
  3. Increase flame to medium-high, add meat, season with salt and pepper and sauté until browned.
  4. Add wine, cook until it reduces down, about 3-4 minutes.
  5. Add tomatoes and bay leaf. Simmer covered on low, at least 1-1/2 to 2 hours, stirring occasionally.
  6. Add half & half and parsley, cook 2 minutes longer.
