Bolognese sauce

Classic bolognese sauce flavored with fresh herbs and garlic. This family favorite is simple and always delicious served with pasta.

Ingredients

  • 500 g (1lb) ground beef beef mince
  • 500 g (1lb) ground pork or pork mince
  • 1 large onion finely chopped (approx 1 cup)
  • 2 carrot peeled and finely chopped/grated (1 cup
  • 2 celery finely chopped (½ cup, ribs
  • 2 bay leaf
  • 6 prigs thyme fresh
  • 4 garlic crushed, cloves
  • cup beef stock
  • 28 oz (800g) strained tomatoes or crushed tomatoes
  • 1 tsp sugar
  • 1-2 tsp salt to taste
  • 1 tsp black pepper
  • ½ cup heavy cream or whipping cream

Instructions

  1. In a large pot or Dutch oven, heat a few tablespoons of olive oil. Add the meat in batches and brown well. Remove from the pot and set aside.
  2. In the same pot, add the onion, carrot, celery and fresh herbs. Cook for 10 minutes, stirring occassionally, until they are golden brown and starting to soften. Add the garlic and cook for another 30 seconds.
  3. Add the meat back into the pot with the stock, tomatoes, sugar, a generous pinch of salt and pepper.
  4. Partially cover with a lid and reduce the heat. Allow to simmer for 30 minutes, stirring occassionally, until the sauce is rich and slightly reduced. Stir in the cream and cook for another 30-45 minutes.
  5. Adjust seasoning and serve.
