The Bombay Sandwich is a layered vegetable sandwich featuring green chutney spread on soft white bread with slices of steamed potato, cucumber, tomato, and optional veggies like onion and bell pepper. Seasoned with chat masala or salt and pepper, it combines fresh, tangy, and mildly spicy flavors with crisp and soft textures for a satisfying vegetarian snack.

Description

This Bombay Sandwich starts with thinly sliced cucumbers and steamed potatoes layered on bread spread with green chutney. The chutney adds a tangy, herbaceous base that enhances the mild flavors of fresh vegetables. Thin slices of ripe tomatoes and optional additions like onions, bell peppers, avocado, or steamed beet further diversify texture and taste.

The sandwich features a balance of textures, from crisp cucumbers and peppers to soft potatoes and bread. Optional seasonings such as chat masala, salt, and black pepper provide mild heat and savory notes. Assembled sandwiches are eaten immediately to avoid soggy bread, maintaining freshness.

This sandwich works well as a light lunch or snack that delivers a variety of fresh vegetable flavors. It can be customized with optional spreads like butter or ketchup according to personal preference.

  3. Take one sliced and start layering veggies over the chutney side. Start with steamed veggies that do not release too much water like potatoes/beets as it will help the bread from getting soggy. Then layer over cucumbers and tomatoes. Finally layer onions/bell peppers making sure you have a nice flat layer of veggies.
