Borani

Borani is a traditional Iranian appetizer that is prepared with yogurt and spinach. It is also common in Persian Jewish cuisine and in Turkey.

Ingredients

Servings
  • 2 lb spinach washed, stemmed and chopped, fresh
  • 3 tablespoons olive oil
  • 2 onion chopped
  • 2 cloves garlic , chopped
  • 16 oz. Greek yogurt
  • salt
  • black pepper
  • 12 kernels walnut

Equipment

  • Dutch oven

Instructions

  1. In a large Dutch oven, heat the olive oil over medium heat and then add the onion. Brown gently until it becomes translucent.
  2. Add the garlic and mix well. Sauté for 1 minute.
  3. Add the spinach, mix well and sauté for 10 minutes, stirring regularly.
  4. When the spinach has warmed, transfer them to a bowl, add the yogurt, salt, pepper, and mix well.
  5. Place in the refrigerator until ready to serve and sprinkle with walnuts.
