Boston Brown Bread

Boston Brown Bread is a moist, spiced quick bread made with raisins, cinnamon, and pecans, distinguished by a dense, rich texture from its unique preparation. The batter is thick and cooked in greased tin cans, giving the bread its characteristic shape and soft crumb. Its sweet, warmly spiced flavor and chewy raisins make it a comforting addition often served with butter or alongside savory dishes like baked beans.

Description

This version of Boston Brown Bread involves soaking raisins overnight in a mixture of boiling water, butter, and baking soda, which plumps the fruit and adds moisture to the bread. The dry ingredients include flour, sugar, cinnamon, and chopped pecans, contributing both sweetness and texture. Eggs and vanilla extract bind the dense batter together.

The batter is spooned into greased tin cans and baked at 350°F for about 35 minutes, producing individual loaves with a thick, moist crumb and soft edges. The canning method creates a distinctive shape and a steamed quality inside while the outside firms slightly.

Boston Brown Bread is traditionally served warm with butter or alongside hearty New England dishes. Its dense yet tender texture and cinnamon-spiced sweetness highlight the warmly flavored raisins and pecans. Letting the bread cool slightly before unmolding helps maintain its shape.

Ingredients

Servings
  • 16 ounces raisins
  • 1 tablespoon butter
  • 2 teaspoon baking soda
  • 2 cup water boiling
  • 4 cups all-purpose flour
  • 2 cups sugar
  • 2 teaspoon ground cinnamon
  • 1/2 cup pecans chopped
  • 2 egg beaten
  • 1 teaspoon vanilla extract

Instructions

  1. In a heatproof bowl, combine the raisins, butter, baking soda, and boiling water. Let it sit overnight to plump up the raisins.
  2. Preheat the oven to 350°F.
  3. Add the remaining ingredients to the raisin mixture, and mix well. The batter will be very thick.
  4. Transfer the batter into tin cans (Campbell's chunky soup size) that have been greased with shortening, until they are 3/4 full. This should yield about 6 cans.
  5. Bake for 35 minutes or until done.
  6. Remove from oven and let cool for a while before taking the cakes out of the cans.
