Description
Boursin Cheese Pasta begins by baking a block of Boursin cheese surrounded by grape tomatoes that soften and burst during roasting, allowing their juices to mingle with the seasoned cheese. Fresh garlic, diced shallots, and basil add pungent and aromatic layers, while olive oil and spices enhance the overall flavor.
While the cheese and tomatoes bake, pasta cooks separately to al dente, maintaining a firm bite. Optional mushrooms and spinach are sautéed until the mushrooms brown and spinach just wilts, adding earthiness and green freshness. Once combined, the cheesy roasted tomato mixture melds with the pasta and vegetables to coat each strand with a creamy, fragrant sauce.
This pasta is best served immediately to enjoy the contrast between warm roasted ingredients and tender pasta. The garlic and herb-infused Boursin cheese offers a distinctive tang and richness different from typical cream sauces, giving the dish a vibrant character without heaviness.
Ingredients
- 1 Box Boursin cheese other flavors can also be used, garlic & fine herbs
- 1 pound grape tomatoes
- 1 shallot diced, medium
- 3 garlic minced, cloves
- 1/2 cup basil sliced, fresh
- 3 tablespoons olive oil
- 1/4 teaspoon salt
- pinch black pepper
- 1/4 teaspoon red pepper flakes can use more or less if desired
- 8 ounces pasta more can be used, this is just a general guideline for four servings (2 oz per person, of choice
- 8 ounces portobello mushrooms chopped or torn, or cremini mushrooms; optional
- 3 cups spinach fresh, baby, optional
- 2 tablespoons olive oil
Instructions
- Preheat oven to 400 degrees F.
- Place the Boursin Cheese in the center of the 9x9 inch baking pan. Place washed grape tomatoes around the cheese.
- Sprinkle minced garlic, diced shallot and sliced basil over the tomatoes.
- Drizzle 3 tablespoons of olive oil over the tomatoes and cheese. Top with salt, pepper and red pepper flakes.
- Bake for 15 minutes, or until the grape tomatoes start to brown or split open.
- While tomatoes and cheese are baking, cook and drain pasta according to package directions for al dente.
- If using spinach and mushrooms, heat remaining olive oil in a pan over medium heat. Saute mushrooms until browned, approximately 5-8 minutes. Add spinach and cook until it just begins to wilt, approximately 1-2 minutes.
- When cheese and tomatoes are done, remove from oven and top with cooked pasta, as well as mushrooms and spinach if using. Stir just until combined and serve immediately.
Notes
- Boursin cheese can be substituted with other flavored soft cheeses similar in texture and taste.
- Adding mushrooms and spinach is optional but contributes additional texture and flavor layers.
- Serve the pasta immediately after combining with the baked cheese and tomatoes to preserve texture and flavor.
