Ingredients
- 1 lb. orzo pasta
- 1 pkg. Boursin cheese (any flavor)
- 4 cups chicken broth
- 4 garlic minced, cloves
- 2/3 cup sundried tomatoes (chopped)
- 1/4 cup heavy cream
- 1/2 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon basil
- 1/2 teaspoon red pepper flakes
- 3/4 cup Parmesan Cheese
Optional:

Instructions
- Start by adding boursin cheese to the center of an x-large skillet. Add in orzo pasta, chicken broth, garlic, sundried tomatoes, heavy cream, salt, pepper, and red pepper flakes.
- Heat the skillet over high heat and bring to a boil, stirring often. Once it begins to softly boil, cook for an additional 7-8 minutes. Stir often. Watch carefully as it make cook quickly. Check to see if the orzo is completely cooked.
- Fold in freshly grated parmesan cheese. If using, fold in fresh spinach, lemon zest, and fresh basil. Sprinkle with pine nuts, if so desired.
- Serve warm with extra parmesan cheese. May thin out with more chicken broth.
Notes
- Use freshly grated Parmesan cheese for better melting and flavor than pre-shredded options.
- If using fresh spinach, fold it in at the end to maintain its color and texture.
- Adjust the amount of chicken broth to achieve your preferred creaminess.
