Description

Bread flour mixed with milk powder, sugar, yeast, and poppy seeds forms the base of this braided bread dough. Vegetable oil and warm water hydrate the flour and activate the yeast, forming a smooth, elastic dough after kneading. The dough rises until doubled, then is divided into three ropes which are braided for an attractive shape and uniform baking.

Before baking at 400°F, the loaf is brushed with an egg yolk, milk, and sugar glaze to achieve a rich golden color and a slightly sweet crust while sprinkling poppy seeds adds texture and visual appeal. The bread bakes for 30 minutes and is cooled before slicing.

  • 1 2/3 cup bread flour
  • 1 teaspoon salt
  • 2 tablespoons milk powder dry
  • 2 tablespoons sugar granulated white
  • 1 teaspoon yeast dry
  • ¾ cup water warm
  • 2 tablespoons vegetable oil
  • 5 tablespoons poppy seeds

  • 1 egg yolk
  • 1 tablespoon milk
  • 1 tablespoon sugar granulated white
  • 1 tablespoon poppy seeds

Instructions

Stand Mixer Directions

  1. In the mixer bowl, add the flour, salt, milk powder, sugar and yeast.
  2. Add the water and oil to the center, and stir until the dough begins to come together, then add the poppy seeds.
  3. Knead for about 10 minutes until the dough is smooth.
  4. Place the dough in an oiled bowl, and cover.
  5. Let the dough rise for about an hour – it should double in volume.
  6. Punch down the dough, then turn out onto a floured surface.
  7. Divide dough into 3 roughly equal pieces, and roll each into a rope (about 12 inches long).
  8. Braid the ropes, and tuck each end underneath the loaf.
  9. Put the loaf onto your baking sheet, cover, and let rise in a warm place for about 30 minutes.
  10. Heat the oven to 400 degrees F.
  11. Combine the egg yolk, milk and sugar and brush gently over the top of the loaf.
  12. Sprinkle with poppy seeds.
  13. Bake for 30 minutes – until golden brown.
  14. Cool completely before cutting.
  15. Devour.

  • You can use a bread machine on the dough cycle to mix and knead; add poppy seeds after the dough starts to form.
  • The glaze of egg yolk, milk, and sugar helps develop a shiny, golden crust with sweet undertones.
