  • 1 green cabbage large, cored and sliced into ½-inch thick
  • ½ pound Bacon cut into ½- inch thick
  • 1 onion thinly sliced, large
  • 6 garlic thinly sliced, cloves
  • salt
  • black pepper

Instructions

  1. Heat the bacon in a large sauce over medium-high heat and cook, stirring occasionally, until the fat is rendered and the bacon is crispy, 7 to 8 minutes.
  2. Add garlic and onion and cook, stirring occasionally, until golden, around 5 to 7 minutes.
  3. Add cabbage, salt, and pepper and cook until slightly wilted, 5 minutes.
  4. Reduce the heat to medium-low and cook covered for about 35 to 45 minutes, stirring occasionally until the cabbage is tender. Add a couple of tablespoons of water if it becomes dry.
  5. Adjust taste and season with salt and pepper if need be.

Notes

  • Quarter the cabbage before coring and slicing thinly to get better control while cutting.
  • Add a few tablespoons of water if the cabbage looks dry during braising to keep it moist.
