Braised Chicken Thighs with Mushrooms
Description
This recipe highlights chicken thighs browned in butter and olive oil to develop crispy skin and rich flavor before being paired with seasoned mushrooms. The mushrooms are cooked with garlic, thyme, rosemary, and a touch of soy sauce, complementing the chicken with umami depth. A braising liquid of chicken broth and optional white wine adds moisture and enhances sauce complexity.
The method involves searing chicken until golden, sautéing mushrooms with herbs, simmering the broth and wine mixture briefly, then layering the chicken atop the mushrooms and baking until the chicken is fully cooked. A quick broil can be applied for crispier skin at the end. The resulting dish presents tender chicken with a savory mushroom base that also serves as the sauce.
Serve this chicken with the mushroom sauce spooned over for a satisfying main course. It pairs well with simple sides like rice, potatoes, or steamed vegetables.
A key tip is to add soy sauce to mushrooms during cooking, not ahead of time, to preserve mushroom moisture and texture.
Ingredients
- 2 pounds chicken thighs bone-in, skin-on
- ½ teaspoon seasoned salt or to taste
- black pepper to taste
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 pound mushrooms sliced ½" thick
- 2 teaspoons soy sauce
- 4 cloves garlic minced
- ½ teaspoon thyme dried leaves
- ½ teaspoon rosemary slightly crushed, dried
- ⅔ cup chicken broth
- ½ cup white wine optional
Instructions
- Preheat oven to 425°F.
- Season chicken with salt & pepper. Set aside.
- Heat butter and oil in a 10" skillet over high heat. Add chicken (skin side down) and brown without moving the chicken, about 4-5 minutes. Remove from pan and set aside.
- Quickly toss the mushrooms with soy sauce. Cook mushrooms, garlic, thyme and rosemary until mushrooms are tender, about 5 minutes.
- Add chicken broth and white wine. Simmer 2 minutes.
- Place seasoned chicken, skin side up over the mushrooms.
- Bake 35-40 minutes or until chicken reaches 165°F. Broil 1 minute if desired.
- Spoon mushroom sauce over chicken. Garnish with parsley and serve.
Notes
- Do not add soy sauce to mushrooms before cooking to avoid releasing excessive moisture and losing mushroom texture.
