Braised Kale with Apple Cider Vinegar
Description
Braised Kale with Apple Cider Vinegar features torn kale leaves cooked over gentle heat with olive oil and sliced garlic until just wilted. Lemon juice and apple cider vinegar add acidity that complements the earthy greens, while a pinch of sea salt seasons it lightly. The kale is covered during cooking to soften the leaves without browning, resulting in tender but vibrant greens.
The flavor is mildly tangy with a hint of garlic, and the texture is soft but not limp. This preparation highlights the kale's natural characteristics with a simple vinegar boost rather than a heavy sauce or seasoning.
Serve this warm side alongside roasted or grilled dishes, or mix it into grains for a nutritious component. Additional vinegar can be added at the table for more acidity according to taste.
Ingredients
- 1 kale washed and torn into small pieces with large stems removed
- 1 tablespoon olive oil
- 2 garlic cloves, finely sliced
- 1 lemon juiced
- 2 tablespoon apple cider vinegar plus more to serve
- ¼ teaspoon salt sea salt
Instructions
- Heat oil on medium in a large pan or wok, until oil begins to ripple. Add garlic and saute 1-2 minutes. (Be careful not to burn the garlic.)
- Add kale and lower heat to medium-low. Drizzle lemon juice and cider over kale and toss the kale.
- Cover with a lid and allow kale to wilt for about 4-5 minutes. Kale should wilt but not turn brown. Sprinkle with salt.
- Serve warm, with extra vinegar if desired.
