Breakfast Burrito Casserole

Breakfast Burrito Casserole layers soft flour tortillas with scrambled eggs, cooked pork sausage blended with cream cheese, sautéed onions and bell peppers, and shredded cheddar cheese. Baked together, the casserole offers a rich, savory dish combining creamy sausage filling and melty cheese with tender vegetables and soft tortilla layers.

Description

This casserole begins by whisking eggs with milk, salt, and pepper, then softly scrambling them until just cooked. Separately, diced onions and green and red bell peppers are sautéed until softened. Ground pork sausage is cooked through, drained, and then simmered with cream cheese until fully melted and creamy, creating a rich meat mixture.

In a greased baking dish, flour tortillas are layered with the sausage mixture, scrambled eggs, cooked vegetables, and shredded cheddar cheese. The layers build a hearty casserole reminiscent of a breakfast burrito but assembled for convenient baking and serving. The dish is baked in stages, starting at 350 degrees Fahrenheit, to meld flavors and melt the cheese thoroughly.

This recipe yields a comforting, filling breakfast or brunch option with balanced textures from the tender eggs and onions, creamy sausage, soft tortillas, and melted cheddar. The combination of sweet and savory peppers adds brightness. It is suitable for group meals where serving multiple portions together is desired.

Ingredients

Servings
  • 6 flour tortilla Mission® brand, super soft
  • 12 large egg
  • 1/3 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 pounds pork breakfast sausage ground
  • 8 ounces cream cheese
  • 1 large onion finely diced
  • 1 green bell pepper finely diced
  • 1 red bell pepper finely diced
  • 8 ounces cheddar cheese shredded

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a bowl whisk together eggs, milk, salt and pepper.
  3. Heat a large skillet coated with cooking spray over medium high heat and add diced onions and peppers. Cook for 5 minutes until softened and set aside.
  4. In the same skillet with a little more cooking spray, add eggs and scramble until they are fully cooked but still slightly runny. Set eggs aside.
  5. Wipe skillet clean and add the pork sausage, cooking over medium high heat until it is fully cooked. Drain grease and add the sausage back to the pan along with the cream cheese. Continue to cook over medium heat, stirring constantly, until the cream cheese is completely melted. Set aside.
  6. In a greased 11x8 inch casserole dish, place two Mission® Super Soft Flour Tortillas in the bottom of the dish.
  7. Spread half of the sausage mixture over the tortillas, followed by half of the eggs, half of the onions and peppers, and ⅓ of the shredded cheese.
  8. Place two more tortillas in the dish and repeat the sausage, eggs, onions and peppers, and cheese.
  9. Top with the remaining 2 flour tortillas and sprinkle with remaining cheese.
  10. Bake for 30 minutes or until the cheese is melted and the casserole is warmed through.
  11. Enjoy!
