Breakfast Burrito

  • 6 flour tortillas cooked or warmed
  • 8 egg
  • ½ cup milk
  • 1 pound ham chopped
  • 1 pound sausage
  • 1 pound Bacon
  • 1 ⅓ cups cheese cheddar, Monterey Jack, Pepper Jack, or Mexican blend, shredded
  • salt to taste
  • black pepper to taste

More Fillings

  • 2 cups hash browns can also use hash brown patties or tater tots, cooked
  • 2 cups beans refried, pinto, or black, heated
  • 1 cup mushroom sautéed
  • 1 cup zucchini sautéed
  • 1 onion finely diced and sautéed
  • 2 Roma tomato diced
  • 1 bell pepper diced

Toppings

  • 1 avocado sliced
  • 1 cup guacamole
  • 1 cup sour cream
  • 1 cup salsa
  • 1 cup tomato diced, fresh
  • ¼ cup cilantro chopped, fresh

Instructions

  1. Warm flour tortillas in the oven or microwave. If using raw tortillas, prepare them according to package directions. Set aside.
  2. Whisk eggs and milk together in a bowl. Set aside.
  3. In a large skillet, cook the preferred breakfast meat. If using diced ham, use a little oil or cooking spray in the pan before heating. Remove meat from the skillet and set aside. If using sausage or bacon, drain grease from the pan leaving a little in the pan for cooking the vegetables (optional) and the eggs.
  4. (Optional) Sautée vegetables or hash browns in 1 tablespoon of cooking oil or remaining bacon or sausage grease. Remove everything from the skillet and set aside.
  5. In the same skillet, add the egg mixture and stir until the eggs are scrambled and cooked through. Add salt and pepper to taste.
  6. Prepare your burritos by adding eggs, cheese, meat, and any other ingredients onto each tortilla.
  7. Roll each tortilla into a burrito and serve with toppings.

Notes

  • Cook hash browns or vegetables in the same skillet used for meats to utilize remaining grease or oil before making eggs.
  • For freezing, wrap burritos individually and store in freezer-safe bags or containers for up to 2 months.
  • Reheat burritos in the microwave wrapped in a damp paper towel, or use an air fryer or oven wrapped in foil to preserve texture.
