Breakfast Casserole
Description
The Breakfast Casserole features a practical base of biscuit dough pressed into a baking dish to form a crust. Over this, cooked sausage and shredded mozzarella and cheddar cheeses add a rich, savory layer, while a mixture of eggs and milk poured on top provides structure and moisture. Baking at a high temperature sets the casserole evenly, with the center firm but not dry. The combination of cheeses yields a balanced, melty texture enhanced by the seasoned egg custard. Its sliceable form makes it convenient for serving multiple people.
The flavor is grounded in the comforting combination of breakfast sausage and cheeses, enhanced with simple seasonings of salt and pepper. The biscuit dough crust adds a tender but sturdy base, while eggs and milk produce a soft, custard-like bite. Baking until the middle no longer jiggles ensures the casserole is fully cooked but still moist.
Serve warm as a substantial breakfast or brunch dish. It pairs well with fresh fruit or a light side salad. This casserole can be prepared with additional sautéed vegetables like onions or bell peppers for added texture and flavor, as suggested in the recipe notes.
Making the casserole ahead by assembling to the point before baking and refrigerating overnight is possible, with a slight increase in baking time. Leftovers keep well refrigerated for several days or can be frozen for longer storage.
Ingredients
- 1 (16.3-ounce) can biscuit dough Grands! brand, 8 count
- 1 (8-ounce) package sausage Jimmy Dean precooked sausage crumbles or 1 cup crumbled cooked sausage
- 1 cup mozzarella cheese shredded
- 1 cup cheddar cheese shredded
- 8 egg beaten, large
- 1 cup milk room temperature
- salt to taste
- black pepper to taste

- Bake for 25–30 minutes, or until set and middle does not jiggle. Let stand for 5 minutes before cutting into squares. Serve warm.
Notes
- Sauté added vegetables such as onions or bell peppers before layering to reduce moisture and bring out their flavor.
- Homemade biscuit dough should be partially cooked before adding toppings to ensure it cooks thoroughly during baking.
- For make-ahead preparation, assemble through the pouring step, cover with foil, and refrigerate overnight; increase baking time slightly when baking from cold.
- Store leftover casserole in airtight containers in the refrigerator for up to 3-4 days or freeze up to 2 months.
