Description
This recipe builds a hearty breakfast casserole as sausage mixed with shredded cheddar and bacon bits is rolled inside flour tortillas. The filled tortillas are arranged seam-side down in a greased 13x9 inch pan. A custard made from beaten eggs, half-and-half, flour, and salt is poured evenly over the rolls, soaking into the tortillas and filling. The dish can be prepared ahead and refrigerated or baked immediately. When baked at 350°F, the casserole is covered initially to help set the filling, then uncovered to melt and lightly brown the cheese topping. Baking continues until the eggs are set and cheese is fully melted.
The result is a savory, firm yet creamy layered breakfast dish with layers of seasoned sausage, melted cheese, and bacon throughout. The softened tortillas hold the filling, creating individual enchilada-style rolls within a cohesive casserole. This dish is suitable for feeding a group or preparing breakfast in advance.
Ingredients
- 1 lb sausage browned
- 2 cups cheddar cheese shredded
- 8 flour tortilla 8 inch
- 6 egg
- 2 cups half-and-half
- 1 tablespoon all-purpose flour
- 1/2 teaspoon salt
- 3 oz bacon bits package Real Bacon Bits brand
Instructions
- Spray 13x9 in pan with cooking spray
- In a large bowl stir together browned sausage, 1 c. cheese and 1/2 of the package of bacon bits.
- Place a 1/8 of the mixture down the center of a tortilla. Roll up and place seem side down in baking dish. Repeat until all tortillas are filled.
- In another large bowl beat eggs, half and half, four and salt. Pour over the tortillas in the pan. You can cover the dish and place in the fridge overnight or baked immediately.
- When ready to bake, preheat the oven to 350 degrees. Uncover dish and sprinkle remaining 1 cup of cheese over tortillas. Sprinkle the rest of the bacon bits over cheese. Cover baking dish and bake for 35 minutes. Uncover dish and bake 10 minutes longer or until set and cheese is melted.
