Breakfast Pizza
Description
The Breakfast Pizza begins by unrolling refrigerated pizza dough into a pan and baking it lightly until it is just golden and set. Meanwhile, eggs are whisked with milk and cooked gently in a skillet until softly scrambled without liquid remaining. Ground sausage is cooked separately until browned and drained of excess grease.
Scrambled eggs are spread over the parbaked crust, followed by browned sausage, a mixture of shredded Monterey Jack and cheddar cheeses, and crumbled cooked bacon strips. The assembled pizza returns to the oven at 400°F for approximately 7 minutes to melt the cheeses and blend flavors.
This pizza combines typical breakfast ingredients in a format familiar to pizza lovers. The toasted crust ensures structure, while the eggs and meats provide a hearty and savory topping. The cheeses add creamy texture and help bind the ingredients together.
The choice of sausage can vary, and different melting cheeses like pepper jack, mozzarella, or provolone can substitute based on preference. Leftovers store well refrigerated and reheat simply in a microwave for subsequent meals.
Ingredients
- 1 tube pizza crust 13.8 oz, refrigerated
- 2 Tbsp olive oil
- 6 large egg
- ¼ c. milk
- 1 lb sausage roll thawed
- 4 Bacon cooked and crumbled, strips
- 1 c. Monterey jack cheese shredded
- 1 c. cheddar cheese shredded
Instructions
- Preheat the oven to 400 degrees F. Unroll and press dough onto bottom and ½ in up the sides of a greased 15 x 10 x 1 inch pan. Prick thoroughly with a fork to prevent bubbling. Brush dough with olive oil.
- Place pizza crust in a preheated oven and bake for 7-8 minutes or until very lightly browned.
- Meanwhile whisk together eggs and milk. Heat a nonstick skillet over medium heat. Add eggs, cook and stir until just scrambled with no liquid eggs remaining. Spoon over parbaked crust.
- In another skillet over medium heat cook ground sausage and cook through, drain off grease and sprinkle on top of eggs. Then top with cheese and cooked and crumbled bacon.
- Put the pizza back in the oven at 400 degrees F until the cheese is melted about 7 minutes.
Notes
- Use ground sausage tubes for ease, but other breakfast sausages cut into small pieces work too.
- Choose your favorite melting cheeses such as mozzarella, pepper jack, or provolone for topping.
- Store leftovers in an airtight container and reheat in the microwave for convenience.
