Breakfast Pizza
Description
This recipe for Breakfast Pizza begins with a partially baked pizza crust brushed with olive oil and sprinkled with basil. Eggs are lightly scrambled with milk, salt, and pepper until just set but still glossy, then spread over the crust along with cooked pork sausage or bacon, diced red bell peppers, sliced green onions, and a cheese combination of pepper jack and sharp cheddar.
The pizza is baked further to melt the cheese and fully cook the eggs, with an option to broil briefly to brown the top. The combination delivers layers of flavor: creamy eggs, savory sausage or bacon, fresh vegetables, and spicy, sharp cheeses on a crisp crust.
The pizza is allowed to rest briefly after baking to set the toppings. Variations include baking whole eggs cracked into cheese wells on the dough for a different presentation and texture. This versatile dish suits those seeking a hearty breakfast with traditional pizza elements.
Ingredients
Eggs
- 2 tablespoons olive oil
- ½ teaspoon basil dried
- 6 egg
- 3 tablespoons milk
- salt to taste
- black pepper to taste
For Assembly
- 1 can pizza crust or homemade pizza dough, prepared
- 8 ounces ground pork sausage cooked and drained, or 1/4 cup cooked and crumbled bacon
- 3 green onions sliced, divided
- ¼ cup red bell pepper finely diced
- 8 ounces pepper jack cheese Cabot
- 2 ounces cheddar cheese extra sharp, Cabot
- 1 tablespoon parsley optional
Instructions
- Preheat oven to 425°F.
- Grease a 10x15-inch rimmed baking sheet with 1 tablespoon olive oil. Press the dough onto the pan and brush it with the remaining 1 tablespoon olive oil. Sprinkle with basil. Bake for 7-8 minutes or until lightly browned.
- Meanwhile, whisk eggs, milk, and salt & pepper. Cook in a lightly oiled skillet over medium heat just until set, about 3-4 minutes. Eggs should be glossy and slightly undercooked (they will cook more in the oven).
- Add the egg to the pizza along with the sausage or bacon, green onion, and bell pepper. Sprinkle the cheese on top.
- Return the pizza to the oven and bake for an additional 8-10 minutes or until the cheese is melted. If desired, broil for 1-2 minutes to brown the cheese on top.
- Remove from the oven, sprinkle with parsley if using. Rest 2-3 minutes before serving.
Notes
- For whole eggs version, create wells in the cheese topping and crack eggs directly on dough, then bake to desired doneness.
- Use cooked and drained ground pork sausage or crumbled cooked bacon as preferred protein topping.
- Let the pizza rest 2-3 minutes after baking for easier slicing and serving.
