Breakfast Potato Casserole

Ingredients

  • 8 egg large
  • ½ cup milk room temperature
  • 1 (20-ounce) bag hash browns thawed, frozen, diced
  • 9-10 ounces Italian sausage precooked
  • salt to taste
  • black pepper to taste
  • cups mild cheddar cheese divided, shredded

Instructions

  1. Preheat the oven to 350°F. Grease a 9-x-13-inch baking dish and set aside.
  2. In a large bowl, mix eggs, milk, hash browns, sausage, salt, pepper, and 1 cup of cheese until combined. Pour into the prepared baking dish.
  3. Bake for 32–35 minutes. Remove from the oven and add the remaining ½ cup cheese on top. Place back in the oven and bake for an additional 3–5 minutes.

  • Make ahead. Cover with plastic wrap and store in the fridge for up to 24 hours, or wrap again with foil and freeze for up to 2 months. Thaw in the refrigerator before baking. Add a few extra minutes to the baking time.
  • Store leftovers in an airtight container in the refrigerator for 3-4 days or freezer for 1-2 months.
