Easy fast and ready to eat these air fryer breakfast potatoes will have you eating a delicious breakfast dish every single day!

Ingredients
- 1 small onion diced
- 3-4 red potatoes diced
- 2 tbs oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tbs hidden valley ranch seasoning
- salt and pepper

Instructions
- Dice 1 small onion, and 3-4 red potatoes into pencil eraser sized pieces and set aside.
- In a medium sized bowl add onion, potatoes, oil, garlic powder, onion powder, hidden valley ranch seasoning, and salt and pepper and toss well until all of the potato and onion pieces are coated.
- Place the mixture into the air fryer and spread into a single layer as much as possible. Give a quick spray with cooking spray.
- Air fry at 400 degrees for 15-20 minutes
- Serve hot
Notes
- Cut the onions and the potatoes into similar size pieces as much as possible so that they cook evenly.
- This recipe will work with other kinds of potatoes, but you will need to peel them and the cooking time may vary.
- Giving a quick spray with the cooking spray adds a much needed bit of oil to the recipe.
- You can also add other spices such as rosemary, thyme, cayenne and more based upon your preferences.
- If you enjoy the flavor of onion but not the texture, you can grate the onion on a grater over the potatoes.
- If you do not have an onion, you can sprinkle the potatoes with onion powder instead.
- Give the potatoes a good splash of salt.
- Half way through the cook time, give the potatoes a good shake to stir them up so that they toast evenly.
- If you want to keep your air fryer as clean as possible, line with aluminum foil before air frying.
- Air frying times vary based on the type of air fryer you own. Start with 15 minutes of cooking and increase by 5 minute increments until as toasty as you please. Taste and give a dose of salt before serving
