Description
The Breakfast Sandwich involves toasting English muffin halves cut-side down in a pan, while simultaneously cooking two eggs cracked side by side in the same pan. Breaking the yolks and seasoning with salt, pepper, and chives allows the eggs to cook evenly and absorb flavor. Sprinkling cheese atop the eggs and covering them with the muffin halves melts the cheese and slightly softens the muffin interior. After flipping the sandwich and adding slices of ham and more cheese, the sandwich is folded and removed from heat. This method keeps all components warm and melds the flavors together.
This sandwich makes a satisfying breakfast or brunch option, combining protein, carbs, and dairy in a handheld form. It’s suitable for quick meals and can be customized with different cheese or meat choices. The use of a single pan makes cleanup convenient.
You can easily adjust the recipe to prepare multiple sandwiches by toasting muffins separately and cooking eggs in batches, accommodating different portion sizes.
Ingredients
- 1 English Muffin cut in half
- 2 egg
- 2-4 lices ham we love black forest but any kind will do
- 1/3 cup cheese we used Mexican cheese, finely shredded
- 1 tsp chives finely chopped
- salt to taste
- black pepper to taste
- 1 Tbsp olive oil or butter to sauté
Instructions
- Heat a large non-stick pan over medium heat and drizzle with 1 Tbsp oil.
- Place your Engish muffin on half of the pan cut-side down. Crack 2 eggs side by side on the other half of the pan and break the yolks with a spatula.
- Once eggs are mostly cooked through, sprinkle tops with salt and pepper to taste, 1 tsp fresh chives and half of shredded cheese. Place toasted english muffins cut-side-down over the eggs and lightly press on the tops with a spatula.
- Flip the sandwich over (egg-side-up). Place ham over half of your sandwich and top with more cheese. Fold the sandwich together and and remove from heat.
Notes
- Adjust the recipe easily to make more sandwiches by toasting English muffins in a toaster and cooking eggs in batches.
- You can substitute ham with other breakfast meats as preferred.
