Ingredients

Servings
  • 2 teaspoons sage dried
  • 2 teaspoons salt
  • 1 teaspoon black pepper ground
  • ¼ teaspoon marjoram dried
  • 1 tablespoon brown sugar
  • teaspoon red pepper flakes
  • ground cloves pinch
  • 2 pounds ground pork

  2. Place the pork in a large bowl and add the mixed spices. Using your hands, mix well and form into patties.
  3. Sauté the patties in a large skillet over medium-high heat for 5 minutes per side, or until internal pork temperature reaches 160°F.

Notes

  • Recipe Tips.
  • Prep ahead of time. Mix the sausage with the spices and keep in an airtight container in the fridge for up to 3 days. For longer storage freeze for up to 6 months.
  • Store. Cooked breakfast sausage can be stored in an airtight container in the fridge for 4-5 days, or in the freezer for about 3 months.
  • Reheat. Heat a little butter or oil in a skillet, add sausage patties, and heat for about 5 minutes per side until warmed through. To microwave wrap the patties with a damp paper towel and heat for 30-60 seconds.
  • Serve this sausage as a breakfast side or as the patty in English muffins to make Breakfast Sandwiches.
  • For even cooking, form each patty using 2-3 ounces of the mixture and form into uniform sizes and thicknesses.
  • Test the flavor by cooking a small amount of the mixture; add any spices as needed.
