Breakfast Strata

Breakfast Strata is a savory baked casserole featuring cubed French baguette soaked in a mixture of eggs, milk, cheese, and sautéed vegetables including onion, mushrooms, and kale. The dish is baked until the top is golden brown and the center puffy, offering a custardy texture with flavorful vegetable layers. Ideal for make-ahead breakfasts or brunches, it allows for easy preparation by letting the mixture rest overnight before baking.

Description

This Breakfast Strata brings together toasted bread cubes, sautéed kale, mushrooms, and onions in a rich custard of eggs, milk, and cheddar cheese. The mix is left to soak overnight in the refrigerator, allowing the bread to absorb the egg mixture fully, resulting in a tender and moist interior after baking.

The strata bakes covered initially to cook through gently, then uncovered to develop a golden, slightly crisp top. The vegetables provide a tender bite with subtle earthiness from the mushrooms and brightness from the kale, balanced by the creamy and slightly sharp cheddar cheese throughout.

It is a suitable dish for serving at breakfasts or brunches, cut into squares for convenient portions. The overnight soak simplifies morning preparation, making it easy to bake fresh in the oven later.

To achieve the best texture and flavor, letting the strata rest overnight in the fridge is recommended, as it allows flavors to meld and ensures a moist, cohesive bake.

Ingredients

Servings
  • 2 tablespoons olive oil plus more for the baking dish
  • 1 ounce baguette cubed, French
  • 1 onion thinly sliced
  • 1 teaspoon salt divided
  • 1 teaspoon black pepper divided
  • 1 ounce container baby bella mushroom sliced
  • 6 cups kale chopped
  • 2 teaspoons Italian seasoning
  • 10 egg
  • 2 cups milk
  • 1 ½ cups cheddar cheese divided, shredded

Instructions

  1. Lightly oil a 9x13-inch baking dish and set bread cubes inside, set aside.
  2. Add olive oil to a large sauté pan and set over medium heat. Add onion and ½ teaspoon salt and cook for 5 minutes. Add mushrooms and ½ teaspoon of pepper and cook for an additional 5 minutes. Add kale and Italian seasoning, and cook for 2 minutes, or until slightly wilted. Add vegetable mixture to the prepared pan with the bread and stir to gently distribute.
  3. In a large bowl, whisk together eggs, milk, and remaining salt and pepper until well-blended. Add 1 cup cheddar cheese and stir to combine.
  4. Pour the egg mixture over the bread and vegetables and sprinkle the remaining cheddar cheese, then cover tightly with foil. Let sit in the fridge overnight.
  5. When ready to bake, preheat the oven to 350˚F. Bake, tightly covered in foil, for 40 minutes. Uncover and bake for an additional 15 minutes, or until the center is puffy and the top is golden brown.
  6. Let cool slightly before cutting into squares and serving.

Notes

  • For optimal texture and flavor, allow the strata to rest covered in the refrigerator overnight before baking.
