Breakfast Tacos Recipe

This Breakfast Tacos Recipe is easy, simple and quick to make. It's full of veggies and so delicious that no one could resist!

Ingredients

  • 4 tbsp olive oil Extra Virgin
  • 1 Large yellow onion Thinly Sliced
  • 1 red bell pepper Sliced
  • 1 bell pepper Sliced, orange
  • 1 1/2 tsp taco seasoning
  • 8 vegetarian sausage patties MorningStar Farms brand, Original flavor
  • 6 egg
  • 6-8 flour tortilla or corn tortilla
  • 1 cup salsa
  • 2 avocado Diced

Instructions

  1. Heat 2 tablespoons of olive oil in a large pan over medium heat. 
  2. Once the oil in warm, saute onion and peppers until onion is translucent and peppers are a bit soft. Add taco seasoning and cook for another 2 minutes. 
  3. Transfer the onions and peppers to a plate and set aside. 
  4. Place the MorningStar Farms® Original Sausage Patties in the pan over medium heat and cook for 4 minutes on each side. No thawing is needed. Once cooked, cut the sausages into small pieces. 
  5. Fry the eggs sunny side up using the remaining 2 tablespoons of olive oil. 
  6. Heat the tortillas in a pan or in the microwave. Top with some onion and peppers. 
  7. Add some MorningStar Farms® Original Sausage Patties pieces on top. 
  8. Top with a sunny side up egg, salsa and avocado. 
  9. Serve warm.
