Breakfast Taquitos

Breakfast Taquitos are the perfect easy breakfast recipe, made with chorizo, or soyrizo for vegetarians, scrambled eggs & pepper jack cheese!

Ingredients

Servings
  • 6 egg
  • ¼ cup milk
  • ½ tsp salt
  • ½ tsp black pepper
  • 12 oz soyrizo or chorizo
  • 1 cup pepper jack cheese shredded
  • 12 flour tortillas small

Optional Toppings

  • salsa
  • queso fresco
  • guacamole
  • diced tomatoes
  • cilantro

Instructions

  1. Preheat the oven to 425°F.
  2. Whisk the eggs, milk, salt and pepper together in a small bowl.
  3. Heat a skillet over medium heat and scramble the eggs, then set aside.
  4. While the eggs are scrambling, cook the soyrizo, or chorizo for 6-8 minutes in a separate skillet over medium heat.
  5. Once the eggs are scrambled and soyrizo is cooked, begin assembling the taquitos.
  6. Place a spoonful of eggs and spoonful of chorizo in the middle of each tortilla.
  7. Sprinkle with the pepper jack cheese.
  8. Roll up tightly and place seam side down on a baking sheet.
  9. Place in the oven and bake for 12-15 minutes.
