Breakfast Tostadas
Description
This recipe begins with crisping tostada shells, either store-bought or homemade by baking sprayed corn tortillas. The refried beans are seasoned with a blend of chili powder, garlic powder, cumin, and cayenne pepper, then spread onto the shells and baked briefly to heat through and maintain crispiness. Eggs are cooked according to preference—scrambled or fried—and seasoned.
Pico de gallo made from fresh tomatoes, onions, and cilantro adds brightness and freshness atop the beans and eggs. Various toppings such as cheese, salsa, avocado, and green onions allow personal customization and added texture or creaminess. The combination creates a balanced breakfast featuring savory, spicy, creamy, and crunchy elements.
Homemade tostada shells can be prepared by baking lightly oiled corn tortillas at 400°F for about 10 minutes, flipping halfway to crisp both sides evenly. Nutritional values vary depending on chosen toppings. The dish is best served immediately while the shells remain crisp.
