Description

Just before finishing, a topping of maple syrup-coated banana slices and cashews is added, then sprinkled with brown sugar and caramelized with additional baking.   • 10 brioche rolls cut into bite-sized pieces
  • 5 egg large
  • 3 cups milk quantity unspecified
  • 1 teaspoon vanilla extract
  • ¼ teaspoon nutmeg ground
  • 1 pinch salt
  • 4 banana
  • ¼ cup cashew quantity unspecified
  • 2 tablespoons maple syrup
  • 1 tablespoon brown sugar

Instructions

  1. Lightly oil a 9x13 baking dish and spread the brioche pieces evenly across the prepared dish.
  2. Whisk together the eggs, milk, vanilla, nutmeg, and salt and pour over the brioche.
  3. Cover and allow to rest until bread has absorbed the milk mixture for 30 minutes. You can keep this for up to a day in the fridge.
  4. Preheat the oven to 350 degrees F / 180 degrees C and bake the casserole for 35 minutes.
  5. Just before the 35 minutes are up, peel and slice the bananas and add them to a bowl. Mix them with the cashew nuts and maple syrup.
  6. Remove the brioche casserole from the oven, and sprinkle on the maple-coated banana slices and cashews before topping with brown sugar.
  7. Return to the oven and bake for an additional 10 minutes, or until the bananas and cashews are caramelized.

  • If the casserole has been chilled overnight, bring it to room temperature before baking for even cooking.
