Brioche French Toast Casserole
Description
The Brioche French Toast Casserole features soft brioche rolls cut into bite-sized pieces and soaked in an egg and milk custard flavored with vanilla and nutmeg. After resting to let the bread absorb the custard, it is baked until the top is lightly golden and the interior is tender. Just before finishing, a topping of maple syrup-coated banana slices and cashews is added, then sprinkled with brown sugar and caramelized with additional baking. This creates a contrast between the soft, creamy bread base and the slightly crunchy, sweet topping.
The nutmeg and vanilla add warm aromatic notes while the bananas and cashews contribute natural sweetness and texture. The dish can be prepared in advance and refrigerated during the resting stage, making it convenient to bake in the morning. Once baked, the casserole may puff up but will settle after cooling slightly.
This casserole serves well as a breakfast or brunch centerpiece. It can be garnished with a dusting of powdered sugar before serving for added presentation. Leftovers store in the refrigerator in an airtight container for up to four days and can be reheated gently to retain moisture and texture.
Ingredients
- 10 brioche rolls cut into bite-sized pieces
- 5 egg large
- 3 cups milk quantity unspecified
- 1 teaspoon vanilla extract
- ¼ teaspoon nutmeg ground
- 1 pinch salt
- 4 banana
- ¼ cup cashew quantity unspecified
- 2 tablespoons maple syrup
- 1 tablespoon brown sugar
Instructions
- Lightly oil a 9x13 baking dish and spread the brioche pieces evenly across the prepared dish.
- Whisk together the eggs, milk, vanilla, nutmeg, and salt and pour over the brioche.
- Cover and allow to rest until bread has absorbed the milk mixture for 30 minutes. You can keep this for up to a day in the fridge.
- Preheat the oven to 350 degrees F / 180 degrees C and bake the casserole for 35 minutes.
- Just before the 35 minutes are up, peel and slice the bananas and add them to a bowl. Mix them with the cashew nuts and maple syrup.
- Remove the brioche casserole from the oven, and sprinkle on the maple-coated banana slices and cashews before topping with brown sugar.
- Return to the oven and bake for an additional 10 minutes, or until the bananas and cashews are caramelized.
Notes
- If the casserole has been chilled overnight, bring it to room temperature before baking for even cooking.
- The casserole will puff up in the oven but settle down after resting a few minutes post-baking.
- Sprinkle the dish with powdered sugar just before serving for extra visual appeal.
- Store leftovers in an airtight container in the refrigerator for up to four days.
