Broccoli Apple Salad
Description
Chopped broccoli florets provide a crisp, slightly bitter base contrasting with the sweet, juicy Gala apples. Toasted walnuts contribute nutty crunch, while matchstick-cut carrots add additional texture and sweetness. Golden raisins or dried cranberries introduce a chewy, fruity element, complemented by the sharpness of chopped red onion. This mix combines fresh ingredients with diverse tastes and textures.
The creamy dressing, made by whisking Greek yogurt, mayonnaise, apple cider vinegar, and honey with a pinch of salt, delivers a balanced tangy-sweet creaminess that coats the salad ingredients evenly. The dressing enhances the natural flavors without overpowering any component. Chilling the dressing before use allows the flavors to meld and settle, improving the salad's overall harmony.
This salad serves well as a refreshing side to heavier entrees like grilled meats or as a light snack. Its mix of crunchy vegetables and fruits with a refreshing dressing makes it appealing for warm weather meals or potlucks. The recipe draws inspiration from popular apple coleslaws and broccoli cauliflower salads to create a familiar yet fresh preparation.
