Broccoli Apple Salad with Poppyseed Dressing (no mayo)
Description
Broccoli Apple Salad with Poppyseed Dressing (no mayo) features fresh broccoli florets paired with tart apple slices, chewy dried cranberries, crunchy pecans, and sharp red onion. The salad is dressed in a smooth, tangy-sweet poppyseed dressing that blends olive oil, apple cider vinegar, plain yogurt, Dijon mustard, honey, and orange juice, accented by poppy seeds. The dressing adds moisture and brightness without the heaviness of mayonnaise.
The salad layers crisp and soft elements together, maintaining fresh textures especially when served soon after tossing. The combination of fruits and nuts introduces natural sweetness and crunch contrasted against the broccoli's firmness and onions' pungency. This makes for a lively salad filling enough for a side dish or light lunch.
It can be served immediately or chilled for several hours to enhance flavor melding, though the broccoli will soften slightly over time while apples remain fresh and non-browned. The salad's components and dressing balance freshness and richness, accommodating make-ahead meals or picnic dishes.
