Broccoli Beef Ramen Noodles

Broccoli Beef Ramen Noodles combines thinly sliced sirloin steak with steamed broccoli and instant ramen noodles in a savory sauce made from soy, garlic, ginger, and broth. The steak is coated in cornstarch for tenderness and quickly seared, while aromatics build rich flavor. A balanced mix of brown sugar and rice vinegar adds depth to the savory notes. This dish delivers tender beef, crisp-tender broccoli, and flavorful noodles in a well-rounded stir-fry perfect for a satisfying meal.

Description

The recipe starts by marinating thinly sliced sirloin steak with soy sauce and cornstarch, which tenderizes the meat and helps develop a light coating once cooked. The beef is seared in vegetable oil until browned but not overcooked, preserving its juiciness.

Next, sesame oil, garlic, ginger, and red pepper flakes aromatize the pan before adding a mix of beef broth, soy sauce, brown sugar, and optional rice vinegar to create a tangy and slightly sweet sauce. Broccoli florets are incorporated to add green, tender-crisp texture alongside the rich beef.

Instant ramen noodles are cooked separately and then combined with the beef and broccoli mixture just before serving, allowing the noodles to soak up the flavorful sauce while retaining a slight chew. Garnishing with green onion sharpens the freshness. This dish blends meaty, savory, and slightly sweet elements with crisp vegetables and noodles.

Substitutions like olive oil for sesame oil and different broth types are possible without losing the core flavors. The recipe enables a quick, hearty stir-fry balancing protein, vegetables, and carbs.

Ingredients

Servings
  • ¼ cup soy sauce 2 tablespoons, low-sodium
  • 1 tablespoon cornstarch
  • 1 pound sirloin steak sliced ¼-inch across the grain, top
  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame oil preferably toasted*
  • 3 garlic crushed or minced, cloves
  • 2 teaspoons ginger or ½ teaspoon ground ginger, grated fresh
  • Pinch red pepper flakes
  • 1 cup beef broth low-sodium
  • 2 tablespoons brown sugar
  • 2 tablespoons rice vinegar optional*
  • 12 ounces broccoli cut into florets
  • 3 instant ramen noodles discard flavoring packet, 3-ounce packages
  • 2 green onions sliced, optional for topping

Instructions

  1. Whisk together 2 tablespoons of the soy sauce and the cornstarch. Pour over sliced beef and toss to coat. Set aside.
  2. Prepare and assemble the rest of your ingredients before you begin cooking.
  3. Set a medium pot of water on to boil for the ramen.
  4. While the ramen water heats up, in a large skillet with a lid, heat vegetable oil over medium-high heat. Add the sirloin and let it cook undisturbed until the first side is well browned, about 1 to 2 minutes. Stir and continue to cook until the steak reaches your desired level of doneness, about 1 to 2 minutes (this is all the cooking it will get).
  5. Transfer meat and any drippings to a bowl and set aside.
  6. Allow the pan to cool for just a minute and then add the sesame oil. Heat over medium heat and add garlic and ginger. Cook until the garlic is just beginning to turn golden and aromatic. Add red pepper flakes and cook for 30 more seconds.
  7. Add the broth, remaining ¼ cup of soy sauce, brown sugar, and vinegar, and use a spatula to scrape any cooked-on bits from the bottom of the pan. Bring to a simmer and cook until the sauce is reduced by about a third, around 3 to 6 minutes.
  8. Add broccoli, place lid on the skillet, and cook for two minutes. Give the broccoli a stir, replace the lid, and continue to cook until it reaches your preferred level of doneness, 1 to 3 minutes more.
  9. While the broccoli cooks, add ramen to the boiling water and cook according to package instructions.
  10. Stir cooked beef and any juices in the bowl into the broccoli and sauce. Add cooked and drained ramen noodles and toss until the noodles are well-coated with sauce.
  11. Serve topped with sliced green onions if desired, and enjoy!

Notes

  • Sesame oil can be substituted with olive oil if desired.
  • Low-sodium chicken or vegetable broth can replace beef broth.
  • If rice vinegar is not available, apple cider vinegar or half the amount of white distilled vinegar can be used.
