Broccoli Bites

Broccoli Bites are small baked balls made from finely chopped cooked broccoli mixed with cheddar cheese, breadcrumbs, spring onion, and egg. They have a tender yet slightly crispy texture from baking and a mild cheesy flavor paired with the freshness of spring onion. These bites serve well warm or cold as a snack or appetizer, and their compact size makes them convenient for casual eating or party platters.

Description

Broccoli Bites combine steamed broccoli with cheddar cheese, egg, breadcrumbs, and spring onion to create a mixture formed into small balls and baked until lightly golden. The broccoli is first cooked until tender, then chopped finely and mixed with melted cheese and binders to hold the bites together. Baking them ensures a firm exterior with a tender interior that showcases the mild bite of broccoli elevated by cheese and seasoned with black pepper.

This recipe yields around 13 bites and can be served warm for a soft, cheesy snack or cold as a handheld appetizer. They make a simple vegetable-based finger food option that complements dips and salads or acts as a light bite on its own.

Ingredients

Servings
  • 1 broccoli large head
  • ½ cup breadcrumbs
  • ½ cup cheddar cheese grated
  • 1 egg
  • 1 spring onion
  • black pepper to taste
  • oil to grease the baking tray

Instructions

  1. Break the broccoli head into florets, add them to a pan of boiling water, cover with a lid and leave to cook for 5-7 minutes until tender.
  2. Chop the broccoli finely, you should get about 2 cups of chopped broccoli. Leave to cool.
  3. Add the broccoli to a bowl, add the cheese, chopped spring onion, breadcrumbs, egg and black pepper, and mix everything well.
  4. Pre-heat the oven to 180 degrees Celsius (350 Fahrenheit).
  5. Grease a baking tray with vegetable oil, then shape small balls out of the broccoli mixture, I ended up with 13 balls, but depending on the size, you might get more or less.
  6. Bake for 30 minutes or until lightly golden brown, turning them on the other side half the way through baking.
  7. Serve warm or cold.
