Description
This Broccoli Casserole recipe uses frozen broccoli florets that are thawed and drained to remove excess moisture. The broccoli combines with mayonnaise, sharp cheddar cheese, condensed cream of mushroom soup, and beaten eggs to form a rich, creamy base. Ingredients
- 2 broccoli 16 oz each, chopped, frozen, thawed, packages
- ¾ c. mayonnaise
- 1 c. cheddar cheese grated sharp
- 10.75 oz condensed cream of mushroom soup from can
- 2 egg beaten
- 2 c. Ritz crackers crushed
- 2 Tbs butter melted
Instructions
- Preheat oven to 350 degrees F.
- Spray a 9 x 13 inch baking dish with non-stick spray. Set aside.
- In a large mixing bowl combine broccoli, mayonnaise, cheese, soup and eggs. Stir until combined. Place the mixture in prepared baking dish.
- In a small bowl combine the crackers and butter. Spread evenly over the broccoli mixture.
- Place casserole dish in the preheated oven for 30 minutes or until set and top is golden brown.
Notes
- Thaw frozen broccoli overnight in the fridge and drain excess liquid before mixing to prevent sogginess.
- If short on time, thaw in a bowl of water, then drain thoroughly before use.
- When substituting fresh broccoli, blanch florets in boiling water for 3-5 minutes, drain, and cool before adding to the recipe.
- Use about 6 cups of fresh broccoli florets to replace two 16-ounce packages of frozen broccoli.
